Herbs and spices have been used in cooking, as far as we know, from when and possibly even before history started being recorded. Other uses for herbs, such as their medicinal and magical properties also go back as far as the earliest records and before that. The two main reasons, why herbs are such a popular addition to both cooked and raw foods, such as salads are on the one hand to enhance and liven up the taste of otherwise dull tasting foods, and on the other hand to mask unpleasant tastes and smells, such as for instance rotten meat in the olden days!

Herbs have seen a recent revival as both ingredients in the kitchen as well as healing or magical herbs. As more and more people are looking at healthier alternatives to prepared or part-prepared foods available to any shopper, they are also keen to go as far back to basics as making their own bread or growing their own vegetables and, of course, herbs. Unlike butter or cream or such like, which can enhance the flavour of a dish beautifully, herbs add flavour and depth without the calories, without added sodium and what’s more, you will only ever need small quantities, as you don’t want your herbs to dominate the flavour of your dish. Using fresh herbs is the best way to enjoy their flavour, and you can add them to your cooking by the handful. They can easily be frozen to preserve them. If you don’t have access to fresh herbs or don’t want to take it as far as growing your own herbs, dried herbs are perfectly good alternative. Just remember, that you will need to use smaller quantities, if you are cooking with dried herbs, as their flavour and aroma is more intense and concentrated.
